SketchUp and Skatter v1 are not multi-threaded, so a lot of cores are not really a benefit.
But V-Ray and Skatter v2 are multi-threaded, so in this case the more cores the better.
So I would say, find a CPU with a nice balance between the number of cores and the single-core performance.
As for the RAM, the more the better!
